A Christmas Treat for Whisky Lovers!
It’s the most wonderful time of the year, and we’re so pleased to be bringing whisky lovers something to make the festive season extra special — a brand-new exclusive single-cask single malt from London’s beloved Bimber distillery!
Matured for five years and finished in a single oloroso sherry cask, this five-year-old single malt is the perfect companion for seasonal celebrations. Bottled at a robust 58.1% ABV, this release showcases Bimber’s signature fruity character, wrapped with indulgent layers of chocolate, toffee, raisin, and spiced orange. With just 287 bottles available, however, it’s destined to be as fleeting as snow on Christmas morning.
As with last year’s Christmas Bimber, our experts have combed through the distillery’s casks to find something our customers will love. While last year’s release was finished in Pedro Ximénez, this year we’ve selected an oloroso-finished gem that was distilled more than five years ago — making it some of the more venerable whisky to have been released from this young distillery.
What does it taste like?
Nose: A rich medley of frangipane, baked apples, and sandalwood, mingling with the comforting scents of Christmas cake, clove-studded orange, and strawberry Quality Street.
Palate: Layers of Terry’s Chocolate Orange, almond, and juicy red berries, with a backbone of toasted oak and chocolate-covered raisins. A splash of water unveils even more fruitiness and a silky texture.
Finish: Clove-studded oranges and toasted logs lead to a finale of Christmas cake with a generous layer of vanilla royal icing.

Who are Bimber distillery?
Bimber, which is Polish for moonshine, is not even a decade old. It produced its first spirit on 26 May 2016, but getting to that point was the result of meticulous preparation. Bimber was designed to create an old-fashioned style of whisky, made with slow fermentation and stills heated by a blazing fire directly underneath them. As such, they commissioned new wooden washbacks and small copper stills for the distillery, located in North Acton in London, and secured a single farm for all their barley. This barley is traditionally floor malted and hand-mashed before being fermented for seven days.
Bimber released its first whisky in 2019 to great fanfare, and went on to create a wide variety of highly acclaimed and sought-after limited editions, including the eye-catching Tube series.
